Pani Puri (Golgapay) Recipe

This Pani Puri dish is most popular street food in India. You will find it almost every where, whether it’s a city or a village, But taste is not the basic thing in food, we should always be careful about hygiene and health, that’s why I am sharing this recipe with you all so that you can enjoy the delicious sweet and sour taste of pani puri at your homes.

Ingredients

FOR PURI

  • 1 cup semolina
  • 2 tablespoons white flour
  • Salt as needed
  • ¼ teaspoon black pepper
  • ¼ teaspoon baking soda
  • Vegetable oil for deep frying
  • Water as needed

FOR STUFFING

  • 1 potato (boiled)
  • 1 small onion (finely chopped)
  • 1 teaspoon black cumin seeds (roasted)
  • 1 teaspoon dried coriander
  • 2 green chilies (finely chopped)
  • Salt as needed
  • ¼ teaspoon black pepper
  • 1 teaspoon chaat masala
  • 2 tablespoons chick peas (canned or boiled)
  • For sweet and sour pani:
  • 2 cups of water
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons white vinegar
  • Salt as needed
  • 2 tablespoons sugar
  • 1 teaspoon cumin powder
  • 1 teaspoon dried coriander powder
  • 1 tablespoon imli chutney
  • ½ teaspoon garlic paste
  • ½ teaspoon ginger paste
  • 1 teaspoon chaat masala
  • ½ teaspoon red chili powder
  • 2 tablespoons tiny gram flour balls (easily available at Indian shops or you can also make it at home)

METHOD

  • For puri, take a bowl and add semolina, white flour, salt, black pepper and baking soda, mix well until all the ingredients are fully incorporated. Now add enough water to make a thick dough and kneed well. Don’t add too much of water to make the dough watery.
  • Cover the dough in the bowl with a thin cloth and set aside for half an hour.
  • After half hour the dough will be puff up and soft.
  • Make small balls out of the dough and roll well. Now sprinkle some flour on the rolling board and place the ball onto it. Roll with a roller and make a thin roti (pancake)
  • Now take a round biscuit cutter (you can use a cup or bowl if you don’t have one) and cut the roti into 3 to 4 round discs.
  • Repeat the same procedure with the rest of the dough and set the discs aside.
  • Heat oil in a pan for deep frying and slowly add the round discs one by one into the hot oil. Press with frying spatula in the center, the puris will puff up, cook for 1 minute or until golden brown then change the side and again cook until golden brown. Repeat the same procedure with all of the puris. Take out the puris in a serving plate and set aside until use.
  • For stuffing, peel and finely chop the boiled potato and add the chopped onion, cumin seeds, salt, chaat masala, green chilies, chick peas and coriander and mix well until the ingredients are fully incorporated. Set aside.
  • Now for sweet and sour pani, take chopped mint, sugar, cumin, coriander, garlic and ginger in a grinder and grind well until smooth.
  • Take out in a bowl and add water to make it watery then add salt, chaat masala, imli chutney, vinegar, red chili powder and gram flour fried balls and mix well.
  • Now prepare the pani puri by cracking the puri at the top to make a small hole, fill it with the stuffing and then dip it in the sweet and sour pani chutney to fill. Immediately eat and enjoy the yummy and spicy taste of homemade pani puris.

(you can make the gram flour balls by mixing 3 tablespoon of gram flour, salt, red chili powder, a pinch of baking soda and enough water to make a thick mixture, then add the small droplets of gram flour mixture into the hot oil to have small gram flour balls ready for stuffing).
