Fish in a red tomato curry flavoured with dry fenugreek leaves, If fenugreek leaves are unavailable, a tsp of dry oregano will also do.

  • 500 g/1 lb fish – cut into 2″- 3″ pieces
  • (preferably boneless and skinless)
  • oil for frying

  • 1 tsp salt
  • ½  tsp red chilli powder
  • 2 tbsp lemon juice
  • 1 tsp ground coriander (dhania powder)
  • 1 tsp ground cumin (jeera powder)

  • 500 g/1 Ib ripe red tomatoes
  • 3-4 tbsp oil
  • 1 tbsp chopped garlic
  • ½ tsp red chilli powder
  • 14 tsp salt
  • 1 tsp garam masala
  • 1 tsp ground coriander (dhania powder)
  • 1 ½  tsp sugar
  • 2 tbsp dry fenugreek leaves (kasuri methi)

  • Rub fish with a little salt and wash well to remove any smell.
  • Sprinkle all ingredients given under marinade on the fish and marinate the fish in it for 10-15 minutes.
  • Pick up the fish pieces and pat dry on a kitchen towel
  • Heat about 1 cup oil and fry the fish lightly, a few pieces at a time. Do not make it crisp. The fish will take about 2-3 minutes in oil to get done. When done, the fish looks white and flaky when you flake it with a fork. Remove and keep aside.
  • Blanch tomatoes by boiling whole tomatoes in water for 4-5 minutes. Remove skin and puree them in a mixer to a smooth puree.
  • Heat 3-4 tbsp oil. Add garlic pieces in pan and fry till light golden.
  • Add tomato puree and all other seasonings including dry fenugreek leaves. Give one boil, stirring continuously. Simmer for 5-7 minutes.
  • Slide in the fish pieces and let them simmer for 2-3 minutes in the tomatoes.
  • Serve hot garnished with fresh cilantro/coriander and green chillies.
